The other day I bought some fresh pineapple and left a bowl of it cut up on the counter. Sure enough, within moments of setting it down my teenage son was there, fork in hand, eating it straight out of the bowl. Those of you with teenage boys have probably seen how food left laying around will suddenly attract attention like ants to a picnic! My whole family loves pineapple and I decided to whip up a sweet and spicy fried rice recipe to go with our pork spare ribs for dinner tonight. This fried rice recipe will take only minutes to make if you cook up the rice the night before. This comes in handy for busy weeknight meals. You can use a can of crushed pineapple or just put chunks of fresh pineapple through the food processor for a few seconds. This fried rice recipe uses flavors more inherent to Mexican foods rather than traditional Chinese style fried rice. Serve it alongside grilled meat and veggies for an easy summer meal!
