We are finally at the end of August here in Georgia and were blessed with a morning in the 60's last week. That might not sound exciting to you but I am so sick of the heat and humidity that I actually DREAM about leaves falling off trees and opening up my windows again. One of my favorite foods to enjoy during the fall is the tiny and oh so tart cranberry. It is such an incredibly versatile food that I stock up every year at Thanksgiving when they go on sale. Well, I am down to my last bag of cranberries so to make room for this years stock I needed to find cranberry recipes to use it up. This whipped cranberry butter recipe is a delicious addition to an otherwise unexciting bagel!
If you are not familiar with whipped butter recipes, you generally soften the butter, whip it with a mixer, and add in softened fruit, spices, and/or a sweetener of some sort. The combination of flavors that you can create while making a whipped butter recipe is practically limitless. Change the fruit based on the season and the sweetener based on what you have in the pantry. Add cinnamon, nutmeg, lemon zest, vanilla or any other combination of flavors. If you choose to use maple syrup like I did in this cranberry butter recipe, PLEASE for the love of God only use the real stuff. That fake maple flavored garbage in the plastic bottle is not worth your money!
