Have you ever opened up a classic French cookbook and checked out some of the recipes in there? Know what you will find? A REALLY long list of ingredients. I am not a huge fan of really long ingredients lists...in my recipes OR in my food! I just don't have time for complicated most days! Simplicity is my main goal when it comes to getting dinner on the table. Healthy and natural are right up there, too, and of course it helps if my family actually likes the food I make for them. Today I am sharing my onion ring salad recipe that uses Alexia Onion Rings. This is a quick, simple and very elegant looking presentation that works for family or guests. Just drizzle your lettuce stuffed onion ring with a homemade lemon herb vinaigrette for a delicious appetizer recipe that takes only minutes to assemble!
If you are not familiar with Alexia products, let me just say that I have been buying them for years! French fries and onion rings are a huge favorite with my family but not always something I have time to make from scratch. Alexia brand French fries are made using only the finest all-natural potatoes grown right here in the USA. Their onion rings have a simple ingredient list and a nice, light 'crunch' after baking. I feel confident buying Alexia frozen products to feed to my family and THEY are always excited to see fries and onion rings for dinner!
I chose to make a homemade lemon herb vinaigrette to drizzle over the top of this onion ring salad recipe. Mainly because I have a TON of herbs in the back yard right now that need to be used up! You could just as easily drizzle your onion rings with a store bought dressing if you are in a hurry or just don't have a lot of fresh herbs to use.
The lemon herb vinaigrette takes only minutes to make and you could even make it up ahead of time if you are going to be in a hurry at dinner. Adjust the combination of herbs to suit your own personal tastes. Tarragon, parsley and oregano are in abundance right now so that is what I chose to use. Then, just bake your onion rings, stuff with lettuce and drizzle with your dressing. Easy and delicious!

I picked up my Alexia onion rings when I was at Walmart. Onion rings and French fries can easily be found in the 'vegetable' section and they even have a handy 'potatoes' sign on the freezer case so you cant miss them!
