This post about Health Benefits of Avocados was inspired by a product I received to review. All opinions expressed here are my own.
Last week there was an in depth article on the avocado in an article on Yahoo. The authors basically called the avocado a perfect food. What did they mean by that? Basically, the avocado has an incredible number of health benefits. Scientists have suggested that adding more avocados into your diet may help you stay thinner. It may also protect you from cardiovascular problems and diabetes, and help you maintain a more youthful appearance. Avocados help keep you young!

Health Benefits of Avocados
The anti-inflammatory properties of the avocado may have a number of health benefits that we have not even discovered yet! However, finding creative ways to use avocados isn't always easy. There is only so much guacamole a girl can eat in her life, right?
Well, as part of the Good Cook Kitchen Expert program, I was sent an avocado slicer and asked to create an avocado recipe. If you are looking to improve your health by adding some avocados into your diet you may want to try this Mexican Chicken Salad recipe. It is simple to create on a busy weeknight which means less work for YOU after a hard day's work.

Tips for Making Mexican Recipes
While looking for recipes to create to spotlight the tasty avocados I bought at the market, I must admit that Mexican flavors just seemed like the way to go for seasonings. Cilantro. taco seasoning, and lime all blend perfectly in my mind with black beans, corn, and avocados.
I decided to use chicken for this recipe since I was using it as a main dish but you could skip the meat if you prefer a vegetarian option. The beans will still give you plenty of protein even without the meat. I used cooked chicken breast I had in my fridge so I didn't even have to worry about the meat preparation when assembling the salad.

I used fresh lime juice since I had them on hand and honestly I think that the flavor really is better than the stuff you get in a bottle at the grocery store. I also included some orange zest that I diced up very finely. You can include lime, lemon or orange zest, whichever you happen to have on hand.
How to Slice an Avocado
If you have never tackled an avocado before, they really are very easy to eat. You can check out these 10 Things You Should Know About Avocados to get started and then head to the grocery store to pick out a few.
Try to find avocados that are slightly firm but have a bit of give to them when pressed with your thumb. When you bring them home, slicing into them and getting out the inside is really pretty easy. I used the avocado slicer from Good Cook which makes it easy to get full slices out of the skin. They are great layered on a sandwich or tucked into homemade spring rolls.
Dice them up and add to tuna salad, egg salad, or whatever else strikes your fancy. The avocado slicer was very easy to use and will certainly come in handy as I try to fit more avocados into our diet. Hey, if avocados are the secret to eternal youth I will be stocking up!
Mexican Chicken Salad with Avocado
Mexican Chicken Salad with Avocado Recipe
There are many health benefits of avocados.This Mexican chicken salad recipe is a delicious way to get healthier!
Ingredients
- 8 to 10 cups lettuce leaves of your choice
- 3 cups chopped cooked chicken breast
- black beans, 15 ounces, rinsed, drained
- 15 ounces corn kernels, drained
- 1 bell pepper, coarsely chopped
- 1 avocado, peeled, stone removed, coarsely chopped
- ¾ cup cherry tomatoes, cut in half
- ½ cup green onions, chopped (green part only)
- ½ cup fresh cilantro, chopped
- 1 tablespoon taco seasoning
- ¼ cup fresh lime juice
- 1 teaspoon finely chopped orange zest
- 2 teaspoon honey
Instructions
- Combine the chicken, beans, corn, bell pepper, avocado, tomatoes, green onion and cilantro in a bowl.
- Combine the taco seasoning, lime juice and honey in a small bowl.
- Place approximately 2 to 3 cups of lettuce on a plate and place some of the chicken mixture on top.
- Drizzle the taco seasoning mixture over the salad and toss gently to combine.
- Serve
