Am I the only person who goes onto Pinterest looking for healthy recipes and then gets sidetracked by things like caramel brownies and fried icecream?ย Here I am…just looking at beautiful images of salads and grilled seafood and then WHAM! I am drooling over espresso cupcakes or some such thing. Well, I finally conquered by Pinterest ADD!ย I headed over there a few days ago for creative ways to get more dark, leafy greens in my diet and discovered a baked spinach and egg recipe that actually had me drooling! Sprinkle it with a little lemon thyme sea salt right before serving!
I have been trying hard to eat more dark, leafy greens but honestly, it is incredibly hard to find ways to serve them that don’t totally make me want to just skip eating completely.ย I have been drinking green smoothies several times a week and putting spinach and arugula on my sandwiches.ย I throw leafy things in soup and eat salads when I would rather be eating cookies.ย Why am I trying to eat so many greens?ย Because my doctor insists that they fight inflammation and I have some chronic pain issues that they suspect is an inflammatory autoimmune response.ย So, spinach, kale and broccoli are my new best friends.ย This egg recipe made a tasty lunch and I actually uses 3 to 4 CUPS of spinach for this one dish!ย Oh, and you should definitely head over to Manila Spoon and see where I got my inspiration from.ย She has some amazing recipes on her site!ย And let me know if you have a favorite egg recipe that also includes a few leafy greens.ย I need all the ideas I can get!
Italian Baked Spinach and Egg Recipe
Italian Baked Spinach and Egg Recipe with Parmesan Cheese
A delicious egg recipe that is easy to make and healthy!
Ingredients
- 4 cups raw spinach
- 3 to 4 TBSP olive oil
- 1 large clove garlic, minced
- 3 to 4 TBSP fresh lemon juice (about 1/2 a small lemon)
- 2 eggs
- 3 TBSP Parmesan Cheese
- 1/4 tsp dried oregano
- salt and pepper to taste
Instructions
- In a large skillet heat the olive oil over medium heat
- Add in the minced garlic and saute 1 to 2 minutes
- Add the spinach and saute only until is is starting to wilt
- Sprinkle with lemon juice and stir. Remove from heat
- Put spinach in the bottom of a small oven safe ramekin or other oven safe baking dish
- Crack two eggs on top of the spinach
- sprinkle with oregano, salt, pepper and Parmesan cheese
- Bake at 400 degrees for 8 to 12 minutes, depending on how 'cooked' you like your eggs.
- Remove from oven and let cool slightly before eating.

it is tasty! I have used Parmesan and Feta and they both work but I think I like the parmesan better!
