Corn Dog Muffins From Scratch: So Easy You Can Skip the Box!

School started for my kids a few weeks ago and I am trying to find alternatives to sandwiches for their lunchbox. These corn dog muffins from scratch were incredibly easy to make and seem to be a big hit with everyone in the house.  You can ‘t go wrong with hot dogs and corn muffins, right?  Well, in an effort to make them a tad bit healthier I chose to use all natural hot dogs and make the muffin mix from scratch.  Homemade corn muffins really don’t take much work to make and  you save a ton of money by skipping the boxed muffin mix.

I will say that the one thing my family said about these corn dog muffins was that there was not enough hot dog in them. I layered a few inside the muffin as well as putting them on top.  Check out the photo below where you can see the layering of batter and hot dog.

When I make them again, I will probably dice up the hot dog and mix it all in with the muffin batter before pouring into the muffin tin.  That way I can increase the amount of hot dog in there and still keep it fairly well dispersed within the muffin.  If you are considering making corn dog muffins from scratch, it really isn’t hard.  I got a batch of a dozen corn dog muffins from this recipe and it was enough for 2 days worth of lunches plus the occasional after school snack for hungry teens.

If you are wondering what else to throw in your lunch box with these homemade corn dog muffins, try a salad or a container of yogurt and some fruit.  If your kid’s school lunch program is anything like ours, they will be eating healthier for a lot less money if you pack them a lunch from home.  If you really just can’t see yourself making corn dog muffins from scratch, you can use your favorite boxed corn muffin and just toss in the diced hot dogs and cheese before baking.

Easy Corn Dog Muffin Recipe from Scratch

Corn dog muffins from scratch are great for breakfast, lunch or dinner. This easy muffin recipe is delicious if you love corn dogs. Perfect to put in lunch boxes or on the go snacking.

Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 1 1/4 cup corn meal
  • 3/4 cup flour
  • 2 TBSP sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 2/3 cup milk
  • 2/3 cup buttermilk
  • 2 TBSP grape seed oil
  • 4 hotdogs (diced)
  • 1/2 cup shredded cheddar cheese (divided)

Instructions

  1. Preheat oven to400 degrees and put muffin cup liners in standard sized muffin cups
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, baking soda and salt. Mix.
  3. In a smaller bowl, combine eggs, milk, buttermilk and oil. Whisk thoroughly
  4. Add wet ingredients to dry and stir just until mixed
  5. Add in hot dogs and 1/4 cup cheese. Mix gently
  6. Divide batter into muffin cups and sprinkle with additional cheese and/or hot dog slices
  7. Bake for 18 to 20 minutes or until toothpick comes out clean and muffins are lightly browned.
  8. Let cool and enjoy!
