I am a huge fan of seafood and not only is it good for you but most of it can be made start to finish in a short amount of time.ย In fact, I sometimes overcook my fish because it cooked so much quicker than I expected!ย One of my favorite fish varieties to purchase is Tilapia.ย It is a mild white fish that is not too expensive and is on the ‘sustainable species’ list at my local Whole Foods.ย I try hard to make sure that the seafood I buy is not endangered and is caught using sustainable methods.ย If you want some pointers for buying this kind of fish check out Seafood Watch at the Monteray Bay Aquarium website. If you are looking for an incredibly easy Tilapia recipe, this one uses only a few simple ingredients and takes less than 10ย minutes to make.ย Serve this fish with frozen veggies and a few slices of bread from your local bakery for a well balanced and QUICK weeknight meal!

I very rarely cook seafood at home (I’m not a huge fan, but I do like eating it out, occassionally) but this recipe sounds so good! I might just have to give it a try!
I think everything is better with feta. LOL! Great recipe!
