I am a huge fan of seafood and not only is it good for you but most of it can be made start to finish in a short amount of time. In fact, I sometimes overcook my fish because it cooked so much quicker than I expected! One of my favorite fish varieties to purchase is Tilapia. It is a mild white fish that is not too expensive and is on the 'sustainable species' list at my local Whole Foods. I try hard to make sure that the seafood I buy is not endangered and is caught using sustainable methods. If you are looking for an incredibly easy Tilapia recipe, this one uses only a few simple ingredients and takes less than 10 minutes to make. Serve this fish with frozen veggies and a few slices of bread from your local bakery for a well balanced and QUICK weeknight meal!
