I am a huge fan of seafood and not only is it good for you but most of it can be made start to finish in a short amount of time.ย  In fact, I sometimes overcook my fish because it cooked so much quicker than I expected!ย  One of my favorite fish varieties to purchase is Tilapia.ย  It is a mild white fish that is not too expensive and is on the ‘sustainable species’ list at my local Whole Foods.ย  I try hard to make sure that the seafood I buy is not endangered and is caught using sustainable methods.ย  If you want some pointers for buying this kind of fish check out Seafood Watch at the Monteray Bay Aquarium website. If you are looking for an incredibly easy Tilapia recipe, this one uses only a few simple ingredients and takes less than 10ย  minutes to make.ย  Serve this fish with frozen veggies and a few slices of bread from your local bakery for a well balanced and QUICK weeknight meal!

Pan Fried Tilapia Recipe with Basil and Feta

Easy Tilapia Recipe that is flavorful and FAST!

Prep Time 1 hour 40 minutes
Cook Time 5 minutes
Total Time 1 hour 45 minutes

Ingredients

  • 6 tilapia filets (about 1 1/2 pounds)
  • 1/4 cup jarred or homemade pesto
  • 1 cup seasoned breadcrumbs
  • 1/3 cup Feta cheese
  • 1/2 tsp garlic salt
  • 4 to 6 TBSP olive oil for frying fish

Instructions

  1. Heat a large saute pan over medium high heat.
  2. Rinse Tilapia and pat dry.
  3. In a food processor combine bread crumbs, salt and Feta cheese. Pulse until combined and the larger chunks of Feta are broken up.
  4. Place the breadcrumb mixture on a dish
  5. Once the pan is hot, add the olive oil and let heat for 1 to 2 minutes
  6. Rub both sides of the fish with pesto. I tried using a pastry brush but really using your hands is much easier!
  7. Dip each piece in breadcrumb mixture on both sides. Pat the mixture onto the fish filet gently.
  8. Pan fry the fish in the olive oil for 2 to 3 minutes or until golden brown. Flip and cook until fish flakes with fork (2 to 3 more minutes)
  9. Place on a plate covered with paper towels and do a second batch if needed.
  10. Serve with your choice of quick sides!
