I started eating a gluten free diet about 6 weeks ago. Last week (having seen no health improvement with going gluten free) I decided to try eating a Paleo diet to see if that helps. If you are not familiar with the Paleo Diet, the basic idea is that if cavemen didn't eat it, we shouldn't either. To be honest, I think it is a fad diet and has many scientific flaws but I am not going to argue for or against the concept here. I decided to try making Paleo cookies because I am about to gnaw my own arm off due to severe hunger. I am going to try to stick it out for 2 months and see if there is an improvement in my overall health. Basically, I have a hyperactive inflammatory system and am trying to see if diet changes can help. The jury is still out but I will keep you updated along the way.
The one thing I really dislike about the Paleo diet so far is the lack of baked goods. No bread, no crackers, no muffins and certainly no cookies. Sure, you can make these things slightly more Paleo friendly but even that is frowned on in many Paleo circles. Cavemen didn't have ovens and thus did not make Paleo cookies! While I was browsing Paleo friendly recipes I found breads described as "stretchy" and brownies made completely of sweet potato, egg and cocoa. None of these really sounded all that appealing. As I browsed the recipes for Paleo cookies I came across something slightly familiar.....macaroons! This macaroon recipe uses almonds that are finely ground until they are almost flour. I am not going to say they are my all time favorite cookie but they were tasty, the kids actually ate them and they satisfy my need for a chewy baked treat occasionally. I will be trying more recipes for paleo cookies and baked goods over the coming weeks to help prevent starvation so please stop back by soon for more ideas!
NOTE: I got the idea for the recipe at PaleoPlan.com but made changes based on some of the comments. If you have any recipes for Paleo cookies that are truly delicious I would love it if you would share! Please leave me a link in the comments so I can try them!

Diane, if you are feeling hungry, you are trying waaaay to hard. Was a paleo diet a "big change" from your most recent way of eating? Are you eating good fats, pastured proteins and lots of veggies with your meals (emphasis on good fats?) What blood type are you? Were you wheat/ grain free prior to going paleo? Every single BODY is different and requires a slightly different mix in their diet. Food and eating are a continuum. If you try to jump too far away from where you were on that continuum, it is VERY difficult to adapt and maintain. What are your ideas?

Thankyou for taking the time to help! I have always eaten very healthy...lots of fresh organic food, locally raised meats, etc. I do have a weakness for bread and cheese though so there were probably too many carbs in there along with all the healthy stuff. I am hypoglycemic and have a fairly high metabolism...although it is slowing down now that I hit 40! I feel better than I did a week ago but still not great. Don't have the energy I once did. Trying to include more eggs, guacamole, and meats but meat has never been a huge part of my diet so that is really hard to get used to. At least the headaches and nausea have passed. I am really just trying this to see if it cuts back on my body's inflammatory response although I have already shed a couple of pounds. I have started exercising daily which also helps. I have started including some greek yogurt and sweet potatoes in my diet the last 4 or 5 days which I also think has helped. I do, however, wish the upset stomach would go away. Has always been a bit tricky and this diet is not settling too well with it so far...
