Homemade Meatball Sub Recipe and #PublixVivaItalia Night

Some nights I have plenty of time to sit around while a whole chicken roasts in the oven and some nights I barely have time to throw a bowl of cereal down in front of a hungry kid.  While I love to cook from scratch, a busy schedule with two active teens doesn't always make that possible.  I have found, however, that the key to getting a healthy, homemade meal on the table every night of the week is GOOD PLANNING!  Look at your calender and figure out which nights you can cook.  On those nights, make double! Or, make a few extra meals for the freezer on a slow weekend.  Invest in a slow cooker and a few good cookbooks.  You CAN make a healthy meal for your family as long as you think ahead.  This homemade meatball sub recipe takes only minutes to make if you cook your meatballs in bulk and store them in the freezer.

Easy Homemade Meatball Sub Recipe

Italian food is always one of our go to meals for busy nights.  Not only are there tons of quick and easy Italian recipes, it is also something everyone in the house actually likes to eat.  I love nights when I don't get complaints over dinner! Homemade Meatball Sub Recipe

For this Homemade Meatball Sub Recipe you can make up the meatballs whenever you want and once they are cool, store them in a zip to lock freezer bag.  Take a bag out of the freezer and let them thaw in the refrigerator the morning before you need them.  Then, just heat a can of Hunts tomato sauce (grab a coupon HERE)  in a small pan with a few dried herbs like oregano or basil.  Heat the meatballs in the microwave or put them in the pan with the sauce to heat for a while.  Then, just put a few in a hoagie roll and sprinkle with some shredded Italian cheese.  You can toss it under the broiler for a few minutes if you would like but it isn't necessary.  Balance out the meal with a few raw veggies and your family has a healthy meal that took only minutes to make!

Easy Homemade Meatball Sub Recipe makes a quick and delicious weeknight dinner idea

An easy homemade meatball sub recipe for a delicious family dinner.

Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • FOR THE MEATBALLS
  • 2 pounds ground beef
  • ½ onion, chopped
  • 2 cloves garlic
  • 2 eggs
  • ½ cup Parmesan cheese
  • ¾ cup bread crumbs
  • 2 TBSP Worcestershire sauce
  • ¼ cup chicken stock
  • FOR THE SAUCE
  • 1 can (15 ounces) tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp garlic powder
  • TO SERVE
  • Hogie rolls
  • shredded mozzarella cheese

Instructions

  1. Make the meatballs: Add all meatball ingredients into a large mixing bowl. Mix on low until completely combined
  2. Form into 2 inch balls and place in glass 9 x 13 inch pans
  3. Bake at 350 degrees for 20 minutes
  4. Remove from oven
  5. Heat sauce and spice ingredients on stove in a medium sauce pan
  6. Add meatballs to sauce and let warm 5 to 10 minutes
  7. Slice open hogie rolls and add a few meatballs inside
  8. top with shredded mozzarella cheese
  9. Place under the broiler for 3 to 4 minutes to melt cheese if desired
  10. sprinkle with additional dried oregano and serve
