Focaccia with Cheddar Cheese and Sun dried Tomatoes

I have discovered that the way to the hearts of the men in this house is definitely through food.  Large quantities of food, preferably served at very frequent intervals!  My husband and my 14 year old son are both over 6 feet tall and are very active.  Bread is offered in abundance in my kitchen and occasionally I am inspired to try making it from scratch.  When I was sent a selection of sun dried tomatoes from Bella Sun Luci to try out I knew that focaccia would be the perfect recipe to try them in!

If you have never had focaccia let me just say that it is incredibly addictive and very easy to make!  It is a simple combination of yeast, water, sugar, flour and olive oil that is seasoned to taste and topped with whatever goodies your heart desires.  Parmesan cheese and pepperoni is a big hit in my family, as is olive focaccia or the classic variety topped with fresh rosemary.  Today’s focaccia recipe featured sun dried tomatoes from Bella Sun Luci along with a generous amount of sharp cheddar cheese.

NOTE:  Things I didn’t do that I recommend:  I should have cut the sun dried tomatoes into smaller pieces and put them UNDER the cheddar cheese to hold them on better.  They fall off a bit this way but it was still tasty!

Focaccia with Cheddar Cheese and Sundried Tomatoes

Quick and easy focaccia recipe that is light and fluffy with lots of flavor

Prep Time 1 hour 30 minutes
Cook Time 20 minutes
Total Time 1 hour 50 minutes

Ingredients

  • 1 cup warm water
  • 2 TBSP sugar
  • 2 packets dry yeast
  • 2 tsp salt dissolved in 3 to 4 TBS water
  • 4 cups unbleached all purpose flour
  • 3 TBSP dried oregano (divided)
  • 1/4 cup olive oil (plus additional to drizzle on top before baking)
  • 1 cup shredded cheddar
  • 3/4 cup chopped Bella Sun Luci sun dried tomatoes
  • t tsp coarsely ground or flaked salt for topping

Instructions

  1. In the bowl of a mixer, combine warm water, sugar and yeast. Stir and let sit 3 to 4 minutes or until foamy.
  2. Into the yeast mixture, combine half the flour, 2 TBSP oregano, the olive oil and the salt (dissolved in the additional water)
  3. Stir until combined.
  4. Add remaining flour and mix with dough hook for 10 minutes on medium speed. If dough is too sticky add a bit more flour.
  5. Grease a large bowl with olive oil and place kneaded dough into it.
  6. Cover with a damp towel and let rise approximately one hour or until double in size.
  7. Grease a cookie sheet (one with a slight edge to it)
  8. Turn the dough onto a floured surface and roll out into a rectangle that will fit inside your cookie sheet. Place the dough onto the cookie sheet, using your fingers to spread the dough to the edges if you need to.
  9. Cover with a damp towel again and let rise 15 to 20 minutes.
  10. Using your finger, poke tiny holes all over the top. Drizzle with additional olive oil (5 to 6 TBSP) and brush over the surface with a pastry brush.
  11. Sprinkle sun dried tomatoes over the top, cover with cheese, salt and additional oregano and bake in a 400 degree oven for 10 to 20 minutes or until the top is golden brown.
  12. Remove from oven and let cool for 10 minutes before pulling apart and serving

  1. I love using sun dried tomatoes in pasta dishes, delish! My second favorite way that I just started doing is putting them on pizza, kicks it up a notch in flavor that is just fantastic!

  2. I have never cooked with sun dried tomatoes but when I go out to a local resturant I eat a pasta dish that has chicken, alfredo sauce, sun dried tomatoes, onions and some other ingredients it is so good!

  3. I love using them on a homemade flat bread breakfast pizza that i make. They’re absolutely delicious, and give the eggs and cheese a nice added flavor ๐Ÿ˜‰
