Well, we are counting down to the end of Lent and I am constantly on the hunt for a new vegetarian recipe to make for my family. Since my son gave up meat for Lent, we have gotten creative with a number of new pasta and rice based dishes, eaten lots of eggs, and have tried just about every vegetarian ‘meat’ type product on the market. I am running out of ideas and the boy has already asked me to please put bacon on the menu for Easter morning. While we always eat a lot of vegetarian meals, I admit it is much easier for me to come up with ideas for meat based dishes when I am in a hurry. This creamy pasta and vegetable dish makes an incredibly easy vegetarian recipe that is perfect for a busy night. You could also use this as a side dish for grilled chicken or pork chops if you prefer to have a meat based dinner.ย  If you don’t have fresh tomatoes, a can of petite diced tomatoes from the pantry would probably work just as well.ย  If you want to eat more vegetarian meals and less meat, check out the Meatless Monday movement!

A quick and easy vegetarian recipe that makes a filling dinner or convenient side dish.

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 3/4 pound angle hair pasta, cooked according to package directions
  • 4 tomatoes, deseeded and chopped
  • 4 cloves garlic, minced
  • 3 TBSP olive oil
  • 1 cup frozen peas, thawed
  • 1/2 cup low fat milk
  • 4 ounces cream cheese, cut into cubes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic salt
  • parsley for serving

Instructions

  1. In a large saute pan, heat the olive oil over medium heat
  2. Add the 4 cloves of minced garlic and the diced tomatoes, cook for 3 to 4 minutes
  3. Add the frozen (thawed) peas, milk, cream cheese, oregano, basil and garlic salt.
  4. Cook, while stirring, for 5 minutes or until cream cheese is melted
  5. Add in the cooked pasta and toss gently to coat
  6. Serve with a garnish of parsley if desired
