I am an introvert by nature, which means most days you will find me on my couch with a book and my favorite cookies.  It’s a great place to be, and I enjoy my alone time. However, there are many moments in life that are made so much better by sharing with friends.  Weddings, promotions, or even just a beautiful spring weekend are all share worthy moments. And those special moments are made even more awesome with the perfect pairing of food and wine! Prophecy Rosé was the perfect accompaniment to my homemade brushetta this week!

I absolutely love any type of appetizer or finger food. There have been many restaurant meals in my life that have included only a collection of appetizers with a side salad for the required vegetable serving!  And, of course, all appetizers taste a tad bit better with the perfect wine, right? I tried out a the new Prophecy Rosé this week and if you have memorable moments to celebrate this summer, I highly recommend sharing it with your friends!

Homemade Bruschetta

 

Pairing wine with food isn’t always easy and I am no expert to be sure!  However, I do know not to pair a bold wine with an equally bold food. Those two flavors just compete with each other.  I love that the light flavors of the Prophecy Rosé allow the more intense flavors of basil and fire roasted tomatoes to really shine in the bruschetta recipe!

How to Make Bruschetta

Brushetta is basically grilled bread rubbed with garlic and topped with olive oil and salt. You can make many variations that  include toppings like tomato, vegetables, beans, cured meat, or cheese. There are SO many different bruschetta recipe but personally, I love the classic Italian flavor combination of basil, tomato, and cheese!  Just brush sliced bread with olive oil and broil in the oven for a few minutes on either side. Then rub with a clove of garlic and sprinkle with sea salt.

Choose Easy Bruschetta Toppings

Once you have your bread oiled, toasted, and seasoned, you just need to add the toppings.  To give this homemade bruschetta recipe a bit more depth, I went with a fire roasted canned tomato.  Fire roasting really gives tomatoes a nice smoky depth to them. And since I am usually pressed for time, I don’t fire roast them myself! Of course, if you are inviting friends over to share your memorable moments with them, you don’t want to spend the whole time in the kitchen cooking for them, right?

Easy Homemade Bruschetta Recipe

Homemade Bruschetta

This simple homemade bruschetta takes only a few minutes to make and is an easy appetizer for your next get together

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes

Ingredients

  • 12 slices of French baguette, sliced into rounds
  • olive oil for brushing
  • 1 clove fresh garlic
  • sea salt
  • 1 can fire roasted diced tomatoes
  • fresh basil, thinly sliced
  • shave Parmesan cheese

Instructions

  1. Brush both sides of your sliced baguette with olive oil. Place on a cookie sheet and broil 3 to 4 minutes on each side, or until lightly browned. Watch closely so it doesn't burn!
  2. Remove from oven and rub top of each slice with a clove of garlic. Sprinkle with salt.
  3. Add a small amount of fresh basil to each slice.
  4. Drain the diced tomatoes. Then, place a small spoonful on top of the basil
  5. Top with shaved fresh Parmesan
  6. Serve immediately
