One of my favorite appetizer recipes has got to be stuffed jalapenos.  Gooey choose and spicy peppers are a delicious combination.  However, not everyone is as much a fan of the spicy peppers as I am.  When I have company over, I know that my stuffed jalapenos will probably not move all that quickly.  I was thrilled when I came across mini sweet peppers at my local grocery store.  They are the perfect solution!  I made up this stuffed mini peppers appetizer recipe using sweet peppers instead of spicy ones.  I chose to fill them with a combination of Cabot Garlic and Herb cheddar cheese, cream cheese and plenty of fresh herbs from the garden.

If you have been following my blog for a while, you are well aware of my love affair with cheese.  Having grown up in New England, I came to appreciate a good cheddar cheese very early in life.  Cabot cheddar cheese actually comes in many different varieties and pairing the Garlic and Herb cheddar with cream cheese in this stuffed mini peppers appetizer gave it a nice balance of flavors.

I had trouble finding the mini peppers for this appetizer recipe.  If you can’t find them in your own store, you can make up the filling and stuff all sorts of other things with it.  Maybe some cherry tomatoes or mushroom caps?  The filling is very versatile and can even be spread on crackers or scooped up with celery.  Really, anything that gets the cheese into your mouth will work just fine!

The variety of herbs you choose to use in this stuffed mini peppers appetizer is totally up to you.  I have an assortment of things growing in the backyard and went with a combination of dill, parsley, and thyme.  You could do an Italian themed filling with basil or oregano or whatever else you have growing nearby.  The only thing that tastes better than fresh herbs is fresh herbs you’ve grown yourself!

Cheddar and Herb Stuffed Mini Peppers Appetizer

Stuffed Mini Bell Pepper Appetizer with Cheddar Cheese and Fresh Herbs

This Cheddar and Herb Stuffed Mini Peppers Appetizer Recipe is the Perfect Easy Appetizer for Your Next Party!

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 10 mini bell peppers, sliced in half, stem removed, deseeded and washed
  • 8 ounces cream cheese, softened
  • 8 ounces Cabot Cheddar with Garlic and Herbs, shredded
  • 3 TBSP assorted fresh herbs, finely chopped
  • 1 clove garlic, minced

Instructions

  1. Mix the cream cheese, cheddar, herbs and minced garlic in a small bowl until completely combined
  2. Scoop spoonfuls into the halves of mini bell peppers
  3. Bake at 350 degrees 10 minutes or until filling is soft
  4. Broil a minute or two if you want the tops lightly browned.
  5. sprinkle with additional fresh herbs if desired
