This Breakfast Stuffed Arepa Recipe is part of an Ambassador Program on behalf of Influence Central for P.A.N. Cornmeal. I received product samples as well as a promotional item to thank me for my participation.
My kids went back to school this week and I have started an early morning workout routine. I am determined to start getting more exercise on a regular basis and since they are both gone by 7 AM I have no more excuses. I don’t eat much before I work out. I may have a granola bar or a piece of fruit but not a whole big breakfast. However, that means that when I return home after my workout and finish my shower I am famished. I can pretty much feel my stomach digesting itself in it’s attempt to achieve hunger satisfaction. I have decided to start keeping a few items in the fridge that will make it easy to put together a breakfast sandwich recipe with very little work. I just have to remember to hide the cooked bacon from the rest of my family!
Up until now, I did not know what arepa were. I have been working with P.A.N. Cornmeal for the last few months to show off the unique and healthy characteristics of this precooked cornmeal. Arepa are a cornmeal flatbread that are perfect for your favorite sandwich recipes. You probably put your breakfast sandwich on a bagel or English muffin, right? Well, I encourage you to put on your ‘Food Explorer’ hat and think outside the box next time you want to make a breakfast sandwich.
P.A.N. Cornmeal is quick and easy to use and this arepa recipe uses only cornmeal, water and a pinch of salt. Corn is rich in nutrients and very versatile, making it a perfect choice to inspire new and creative recipes. Cornmeal is a staple in countries all over the globe and P.A.N. Cornmeal is making its way into kitchens throughout the USA. For a wide variety of recipes using P.A.N. Cornmeal, visit the P.A.N. Tumblr page.

I’m pretty simple when it comes to breakfast, but I like to try new things sometimes. This looks delicious. I don’t think I’ve ever used cornmeal as a focus ingredient before. My kids will be on the bus by 6:45 starting this year and I’m not sure what I’ll do with myself. I guess exercise should be on the top of the list!
I’ve never heard of an arepa before. I need to try this!
This is a power breakfast if I’ve ever seen one. I can’t wait to try this. The addition of the avocado did it for me!
Now that is a breakfast the husband would love every morning before he heads out to work. Packed full of goodies he loves and plenty of energy for the day.
Yum!! I would totally eat that. Thanks for the great recipe!
