Now that the kids are back in school our evenings have gotten a bit chaotic again. Homework, practicing instruments, and running from one activity to another means a lot less time for making dinner. That doesn't mean I have to order a pizza every night or rely on fast food as long as I plan ahead a little bit on the weekend. Chicken breast are one of those things that I like to throw on the grill or cook up on the stove just to keep them in the fridge for emergency meal preparation. There is a lot you can do with a cooked chicken breast that takes almost no time at all to prepare. As part of the Mezzetta Make That Sandwich contest, I decided to see what sort of spicy creation I could create for a busy weeknight meal.
Usually when I see a spicy chicken sandwich recipe it uses a breaded chicken patty but I really wanted to start with simple, real ingredients. I sauteed chicken breasts in olive oil and sliced them thinly using Chef's Choice 615 Premium Electric Food Slicer. Having a meat slicer at home means that you don't have to rely on processed sandwich meats to create your sandwiches. I also bought a ball of fresh mozzarella and sliced that on the electric food slicer as well. Same with the loaf of real Italian bread that I picked up in the deli. Then I started getting creative with the Mezzetta products that I was sent to review.
My husband and son always fight for the pepperoncini that comes with our pizza so I knew that those would be a huge hit. Personally I am a huge fan of roasted red peppers and to add a bit of a kick to the chicken sandwich recipe I threw in a few of the sliced jalapenos as well. With the addition of some fresh sliced onion and a few sprinkles of basil and oregano from the garden and my spicy chicken sandwich recipe was complete! Assembly was quick and easy and we were cleaned up and on the way to guitar lessons without a lot of chaos and stress. Having a weeknight meal that involves no chaos and stress is nice because honestly, our lives are chaotic enough without having to deal with a dinner recipe that involves 57 ingredients and more pots and pans than will fit in my dishwasher. Spicy Chicken Sandwich Recipe
Spicy Chicken Sandwich Recipe
A spicy chicken sandwich loaded with flavor!
Ingredients
- 3 boneless, skinless chicken breasts
- 6 tablespoon olive oil, divided
- 1 loaf Italian Bread
- 1 ball of fresh mozzarella cheese, sliced
- ½ onion, sliced
- ½ cup Mezzetta Roasted Red Bell Peppers
- ⅓ cup Mezzetta Deli-Sliced Golden Greek Peperoncini
- 2 to 3 tablespoon Mezzetta Jalapeno Peppers
- 2 teaspoon dried basil
- 2 teaspoon dried oregano
- 1 teaspoon garlic salt
- whole olives for decorating if desired. (I used the Bleu Cheese Stuffed Olives)
Instructions
- In a large saute pan over medium heat, heat 3 tablespoon olive oil and cook chicken breast 5 minutes on each side or until no longer pink in the middle. Let cool. You can do this step ahead of time and store chicken in the fridge until needed.
- In a saute pan over medium heat, add the remaining olive oil and saute the sliced onion until it starts to wilt, 3 to 4 minutes.
- Add the Mezzetta peperoncini, roasted red bell pepper, and jalapeno. Saute 2 to 3 minutes. Add basil, oregano, and salt. Remove from heat.
- To assemble the sandwich: Slice the chicken breast thinly. Layer the chicken, mozzarella, and sauteed vegetables between two slices of Italian bread. Add an olive for decor if desired.
