This week my son has started tennis camp so I anticipate that my grocery bill will double in the next few days.  At 15 years old and 6’3″ tall he has an incredible metabolism and resembles a string bean no matter how much he eats.  This morning’s breakfast included a protein shake, fruit, toast and trail mix.  I pray that is enough to tide him over until he gets home for lunch!  I made this energy bar recipe to help refuel him after his rigorous workout.  If you have active kids, you need to make sure you provide a diet loaded with protein and carbohydrates and Premier Protein powder makes adding protein to your baked goods incredibly easy!

Premier Protein and Energy Bar Recipe

This energy bar recipe was incredibly easy to make and requires NO cooking!  You just melt the almond butter and honey, throw in a few other healthy and nutritious ingredients and then chill for a few hours.  Once they are firm, you will get about 15 small energy bars which (if your are lucky!) will last about a week for one hungry athlete! Almond Joy Energy Bar Recipe

Almond Joy Energy Bar Recipe

This almond joy energy bar recipe is easy to make and provides tasty and healthy energy!

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1/2 teaspoon almond extract
  • pinch salt
  • 3/4 cup old fashioned rolled oats
  • 2/3 cup unsweetened coconut, divided
  • 1/3 cup Premier Protein chocolate powder
  • 1/3 cup cocoa powder

Instructions

  1. In a medium sized sauce pan, combine the almond butter, salt, and honey. Heat over medium heat until melted and smooth
  2. Remove from heat.
  3. Add in almond extract, salt, oats, protein powder, cocoa powder and 1/3 cup of coconut
  4. Press into a well greased 9 x 9 inch pan
  5. Press remaining coconut on top of the dough
  6. Chill for 3 hours or until firm
  7. Cut into bars and store in a sealed container in the refrigerator.
