Easy Summer Appetizer: Caprese on a Stick

My garden is finally starting to yield a few tomatoes and the basil is growing like a weed.  This is an easy summer appetizer that requires very little work and you can even have the kids help you out with it!  Once the cubes of cheese are cut, just hand them all the ingredients and let them start skewering all the bits and pieces! While they prepare your easy summer appetizer, you can be doing something else…like maybe your nails?

Easy Summer Appetizer: Caprese on a Stick

Ingredients:

cherry tomatoes

basil leaves

cubes of fresh mozzarella

Italian Dressing

toothpicks

 

Directions:  On a toothpick, place one cherry tomato, one leaf of basil (folded in half or quarters to make it a bit smaller), and then one small cube of fresh mozzarella cheese.  On a serving platter, drizzle a layer of Italian dressing and make sure the plate is completely covered.  As each skewered  appetizer is finished, place it standing upright on the plate with the cheese on top of the Italian dressing.  Keep chilled or serve immediately.
