Easy Pancake #Recipe: Banana Yogurt Pancakes

From the time my children were young, I learned the art of hiding healthy foods where they least expected it.  Smoothies would be filled with flax seed oil and wheat germ, scrambled eggs hid zucchini and cheese and pancakes could hold all sorts of healthy ingredients!  Sometimes, as a mom, you have to get creative with your kids' nutrition!  These pancakes hold all sorts of goodness and they are really easy to make.  The recipe below will make lots of pancakes (we got 12 large pancakes)...I like leftovers and they warm up well in the toaster … [Read more...]

Refreshing Acai and Mint Cocktail #Recipe

My husband and I often enjoy sitting down to a cocktail or a glass of wine after the kids have gone to bed.  While it is easy to just dump some rum in a glass of coke, it isn't exactly creative.  I decided to put a little more effort into tonight's night cap and used some acai puree, an assortment of juices, and a few other simple  ingredients to create a superfruit cocktail!  It was incredibly easy to make and used Amafruits Organic 100% Pure Acai Berry Pulp.  If you want to try some for yourself, they offer FREE SHIIPPING anywhere in the … [Read more...]

Colorado Chili Meatloaf #Recipe with Cabot Sharp Light Cheddar

Meatloaf is one of those classic dinners that I grew up on as a kid.  My mom, however, didn't make meatloaf like THIS!  Many years ago I clipped a recipe out of a newspaper (and I am sorry but have no way to give credit for this deliciousness!) and my husband loves this stuff!  It is loaded with vegetables and has a nice amount of 'kick' to it.  If you prefer yours to be less spicy just skip the fresh jalapenos.  I made this recipe a tad bit lower in fat by using a grass fed beef and Cabot's Sharp Light Cheddar.  These are two really easy ways … [Read more...]

I am a huge fan of anything coffee flavored...whether that is straight coffee, iced coffee, coffee ice cream or just about anything else you can think of!  Chocolate with coffee is just about the closest thing to heaven I can imagine so when I was asked to be a part of a Mom Central campaign that celebrated International Coffee Day with International Delight Iced Coffee I figured it was right up my alley!  I headed out to buy some and chose the International Delights Iced Coffee Mocha flavor, although you can get original, caramel, or vanilla.  … [Read more...]

No Bake Oatmeal Raisin Energy Balls

My kids are extremely active...they participate in a number of after school sports and some days they get off the bus and onto the tennis court with only a 15 minute break.  That means I need quick, healthy, high energy snacks to feed them so they don't pass out in the middle of a practice!  These energy balls are high in protein and whole grains and are sweet enough that they think they are a great treat!  They are really easy to make and the ingredients can be altered depending on your kid's tastes. No Bake Oatmeal Raisin Energy … [Read more...]
