Potato Leek Soup #Recipe

My son gave up meat for Lent this year so all of us have significantly reduced our meat intake this month.  Since mommy isn't making 2 separate dinners every night, I have been trying to get creative with high protein, non meat based meals.  Some great alternatives to meat for protein are beans, lentils, eggs, nuts, and dairy. Plant based proteins lack vitamin B12 so nutritional yeast makes a great supplement to add into the diet.  Nutritional yeast is just what it sounds like...a nutritious yeast supplement.  It isn't live so you can't use it … [Read more...]

Easy Garlic Cheese Biscuits #Recipe

I have a growing teenage boy in my house who's appetite rivals that of most football players.  Dinners must include large quantities of carbs in order to fill him up.  Oh, sure, there is meat, veggies, milk and all those other food groups, too.  However what really sticks to the ribs and gets him to say 'I'm full' is the carbohydrates.  Most dinners I make include rolls, bread, or biscuits of some sort.  Many years ago I found a recipe for garlic cheese biscuits on the Bisquick box and have been playing around with it ever since.  It is a huge … [Read more...]

Chimichurri Dipping Sauce and Marinade #Recipe

My husband and I get our beef from a small, local farmer and we do a fair amount of grilling.  One of the perks of living in the south is that I can grill in January. (Okay, well, my HUSBAND can grill in January!)  I like to find unique marinades and sauces that will compliment the bold flavor of a grilled grass fed steak and this Chimichurri dipping sauce and marinade looked like a great blend of fresh flavors.  I found the recipe in the Big Green Egg Cookbook: Celebrating the World's Best Smoker and Grill cookbook that I got for my husband … [Read more...]

Sweet and Spicy Stuffed Peppers

When I was growing up my mom used to love making stuffed peppers.  I actually cannot remember what she stuffed them WITH but I remember eating them a fair amount. I decided to play around with a combination of sweet and spicy flavors as a filling to this recipe.  I used a spicy Italian sausage but you could use ground beef or ground turkey if you wanted.  You would need to add a bit more flavor and heat, though, to give the filling a kick.  These stuffed peppers fed my family of 4 for 2 nights.  I used some pretty big peppers and still had a … [Read more...]

Lemon Cheesecake Pie #Recipe

On Friday, my daughter made this Lemon Cheesecake Pie as part of her Girl Scout Troop's Bakeoff competition.  The rules stated that the pie had to be made completely by HER with no help from mom.  You have no idea how difficult this was!  I wanted to be in the kitchen hovering and micromanaging to make sure that it came out perfectly.  Well, she did an awesome job and the pie came out delicious however she spiked a fever the next day and couldn't participate in the bakeoff.  She was sad but enjoyed the experience of cooking by herself … [Read more...]

See How Fitness Guru Andrea Riggs Starts Her Day with the Egg White Delight McMuffin

This winter, a new and healthier breakfast option is available at my local McDonald's.  Atlanta area McDonald's restaurants have introduced a new wholesome menu item called the Egg White Delight McMuffin.  I got the chance to try out this new creation and you can read my review to see how I liked it....let me just say that not a crumb was left behind that morning!  The Egg White Delight McMuffin is freshly prepared with 100 percent egg whites, freshly cooked on the grill with melted white cheddar, a slice of extra lean Canadian bacon and served … [Read more...]

Healthy Snacks for Holiday Entertaining

My favorite part of the holidays is all of the get togethers with family and friends.  Of course, these social gatherings always revolve around food so maybe what I really like about the holidays is the eating!  Whenever we have guests over, I have a tendency to over do it when it comes to food...there are always tons of snacks and appetizers to nibble on and I usually have enough food left over to feed a small army!  I try hard to offer healthy snacks to my guests along side one or two decadent appetizers.  I hate to blow my diet completely in … [Read more...]
