So, my children think I am the meanest mom every created. WHY? Because I don't buy them things like pudding and jello and those artificial squeeze bottles of milk flavorings. While I splurge occasionally and I am not going to say my kids NEVER get store bought treats like that, I try to make it a very rare occurrence. I have been trying to find homemade solutions to some of these treats that will show my children that I am NOT a horrible mother. They certainly do not care if they eat artificial colors, preservatives and chemicals at every meal but they are also very happy eating my homemade stuff as well. So, I browsed through a LOT of homemade vanilla pudding recipes online. I know from past dessert recipes that pudding with eggs will be richer and creamier but I sometimes have issues with 'curdling' the egg mixture because I heat it too quickly. So, the homemade vanilla recipe that I chose to make was originally found on CHOW and what I thought was unique is that the egg yolks are added to the milk before you even start heating it! I had high hopes that I would end up with a smooth pudding at the end and was certainly not disappointed. I did have one or two SMALL lumps which my children were quick to point out, the ungrateful little mongrels! Overall, this recipe is incredibly easy to make, it just takes a tad bit of patience to stir it and allow it to thicken. I used a vanilla bean PASTE that has actual vanilla beans in it (you can see them in the photo). I think it gives the pudding a really nice look and flavor. You can use regular vanilla extract if you prefer. If you want pictures of each step, head over the CHOW and see the great visuals they offered. Now that you have a great homemade vanilla pudding recipe there is no more reason to buy that artificial powder in a box, right? Now, I just need to figure out how to make butterscotch!
