I try very hard to eat healthy on a semi regular basis.  I provide healthy snacks like fruit and yogurt for my kids, we eat veggies at least once a day and we limit fast food to the occasional busy lunchtime treat.  However, my kids are just like everyone else’s in that they LOVE junkfood.  The want pop tarts and candy and kid’s meals just like every other kid in America.  I have been working to find a balance that we are both happy with.  They want classic ‘junk food’ and I want ‘healthier options’.  Sometimes I hit upon an idea for a recipe that we can both be happy with  and these Mexican Chicken Tenders are an easy dinner recipe that is also much healthier than the fast food your kids are probably begging for.

For this easy dinner recipe I used organic chicken breasts that were coated with a crumb mixture of Salba Chia tortilla chips, fresh cilantro and fajita seasoning mix.  Processed in the Cuisinart food processor it only took a few seconds to make.  Salba Chia tortilla chips are organic and Non GMO project verified.  The chia seeds make them high in Omega fatty acids and they are packed full of nutrients.  They recently won the 2013 SELF Healthy Food Award and were featured in the June edition of Self Magazine.  I paired the Mexican Chicken Tenders with Salba Chia Salsa for an additional kick of nutrition.  My kids were happy with my easy dinner recipe and *I* was happy to offer them a nutritious meal that they didn’t complain about!

Ingredients
  • 1 pound boneless chicken breast, cut into strips
  • 1 bag (7 ounces) Salba Chia Tortilla Chips
  • ⅓ cup fresh cilantro
  • 2 tsp fajita seasoning
  • 1 egg
  • 2 TBSP milk
  • olive oil for coating cookie sheet
  • Salba Chia Salsa for dipping

Instructions
  1. In a food processor, combine the Salba Chia tortilla chips, cilantro and fajita seasoning. Pulse until completely mixed and resembles course crumbs. Put onto a shallow plate.
  2. In a small bowl, whisk the egg and the milk
  3. Dip each chicken strip in the egg mixture, then coat with crumbs and place on a cookie sheet coated with olive oil
  4. Bake chicken at 350 degrees for approximately 20 minutes or until done, turning over half way through.
  5. Serve with salsa for dipping.

Brown rice is a much better choice in our diet than white rice if you are looking to increase your fiber intake.  It isn’t always easy to include brown rice in my diet, however, for a couple of reasons.  If you ask my kids what their favorite type of rice is they will tell you that it is white rice with plenty of butter on it.  While they will eat brown rice now as teenagers, it definitely took a while before they really got used to the slightly chewier texture.  One of the other reasons that brown rice is harder to use in my cooking than white rice is that it takes SOOOO much longer to cook!  In my steamer it takes an HOUR to cook a batch of brown rice!  To be honest, I don’t always think that far ahead when it comes to making dinner.  Some days I hear the garage door open signalling that my husband is home and I have not thought about dinner at all yet.

When I got the chance to work with Success Rice to try out their Boil in Bag varieties of rice I decided to see whether I could replace the white rice in one of my recipes with brown rice.  This coconut brown rice pudding recipe is a great way to get kids to eat more brown rice (and as a result, more fiber!) without a single complaint at all.  Normally I could not use brown rice in this recipe because it takes too long to cook but by using the Success Rice that is already precooked it made it the perfect high fiber addition to a classic dessert.

Note:  I used Simple Truth coconut milk that I bought in the refrigerated section that was 8% fat.  You may get different results with different brands or if you use a lower fat version.

A high fiber, delicious dessert with plenty of coconut flavor.

Ingredients
  • 2 bags Success Boil in Bag brown rice
  • 3 cups coconut milk
  • pinch salt
  • ¼ cup brown sugar
  • 1 egg
  • ⅓ cup shredded sweetened coconut
  • ⅓ cup dried fruit
  • 2 tsp vanilla

Instructions
  1. In a medium sauce pan, pour in the coconut milk and pinch of salt. Remove the rice from the bags and add to the pan.
  2. Over medium high heat while stirring frequently bring the rice mixture to a boil. Turn down heat and simmer until tender (about 20 minutes). Much of the coconut milk will be absorbed. If you find that it is getting too dry you can add a little more coconut milk and continue cooking
  3. In a small bowl, whisk the egg and brown sugar
  4. When rice is tender, remove pan from heat. Slowly whisk in about 1 cup of the mixture into the sugar/egg. When combined, add the mixture back into the rest of the rice/coconut milk slowly while stirring briskly.
  5. Place pan back on medium heat and cook until thickened.
  6. Remove pan from heat and add in the vanilla, coconut and dried fruit. Stir until combined.
  7. Serve warm or chilled. You can drizzle a little bit more coconut milk over the top right before serving if desired.

Lightly sweet and tart, this cocktail is very refreshing!
Recipe type: Drinks
Serves: 1

Ingredients
  • 2 parts Broken Shed Vodka
  • 1 part orange juice
  • 1 part cranberry juice
  • 1 part soda water
  • mint for garnish

Instructions
  1. Combine all ingredients in a tall glass
  2. Add ice and stir gently
  3. garnish with mint if desired

My kids are huge fans of dessert and one of their all time favorite sweets is cupcakes.  What kid doesn’t like cupcakes, right?  Well, my big thing against cupcakes is the frosting.  Not only do I think most frosting is sickeningly sweet, but I am also horrible at the actual frosting of the cupcake.  No matter how hard I try, I end up with crumbs in it with bits of frosting just about everywhere.  So, when I stumbled across a cupcake recipe that had no frosting on it, I decided to play around with it and see how it turned out.  If you are looking for a cupcake recipe that is a little bit more ‘grown up’ than most, this might be a good option.

This cupcake recipe is incredibly easy to make and comes out very light and sweet.  It uses Hey Shuga! sugar cane syrup and brown sugar as the sweeteners, which along with the cinnamon give it a nice, dark color.  If you have never used sugar cane syrup, it is a great sweetener to keep in the house.  I use it in iced tea a lot because I hate trying to get granulated sugar to dissolve in a cold cup of tea.  Hey Shuga! needs no dissolving so it adds sweetness fast.  I also use it a lot in homemade oatmeal.   I hate buying those preflavored packets at the grocery store.  Some Hey Shuga! and some cinnamon and raisins and I have a nice, filling breakfast without the artificial garbage in the prepackaged ones.

Moist and flavorful cupcake that needs no frosting!

Ingredients
  • 2 cups all-purpose flour
  • 1 cups light brown sugar, packed
  • ⅛ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup cold butter, cut into cubes
  • 1½ teaspoon baking soda
  • 1 cups boiling water
  • 1 tsp vanilla
  • ½ cup cane syrup

Instructions
  1. In a large mixing bow, place the flour, brown sugar, salt and cinnamon. Mix gently to blended.
  2. Add the cold butter and work it into the dry ingredients until completely incorporated. You want the mixture to be slightly crumbly.
  3. Remove ½ cup of this mixture to use as the streusel topping.
  4. To the remaining mixture, add the vanilla, cane syrup and boiling water, beating until smooth.
  5. Fill the muffin cups two-thirds full.
  6. Sprinkle the reserved topping mixture over the cupcakes, spreading out evenly.
  7. Bake the cupcakes for 20 – 25 minutes or until a tester inserted in the middle comes out clean.
  8. Cool in the pans for 10 minutes, then remove to wire racks to cool completely.

My husband has managed to get my kids addicted to chicken wings and every time we head out to a restaurant, that is what they enjoy getting.  Since I cannot afford for them to go out to eat every week, I figured I needed to find a recipe to easily make them at home.  I love the combination of sweet and spicy flavors combined together and this recipe has a great balance.  It is not flaming hot so if you want MORE heat, just kick it up with some cayenne pepper in the dipping sauce right before you serve it.  I warn you though, put down some aluminum foil on your baking sheet because the honey in the marinade creates a bit of a mess when it bakes!  Since this chicken wing recipe is baked rather than fried it is lower in fat, which is nice!  I use sriracha sauce for the heat in this recipe but you can use other hot sauces depending on your preferences.

A great blend of sweet and spicy flavors make these chicken wings delicious!

Serves: 4 to 6

Ingredients
  • 2 dozen Chicken wings and/or Drumettes
  • For the marinade:
  • ½ cup Olive Oil
  • ¼ red wine Vinegar
  • 1 TBSP Sriracha sauce
  • ½ cup Honey
  • 2 TBSP Soy Sauce
  • ½ teaspoon Chili Powder
  • 2 Garlic cloves (minced)
  • 1 tsp minced ginger
  • ¼ tsp black pepper to taste
  • For the Dipping Sauce:
  • 1 TBSP Sriracha sauce
  • ½ cup Honey
  • 2 TBSP Soy Sauce
  • 1 teaspoon grated Ginger
  • ⅛ tsp cayenne pepper (optional)

Instructions
  1. Mix all of the marinade ingredients in a large bowl
  2. Add in the chicken wings/drumetts and toss to coat. Place in refrigerator and marinate 2 hours to overnight, mixing occasionally
  3. Place the chicken on a foil lined cookie sheet
  4. Bake in an oven preheated to 425 degrees for 35 minutes, turning over half way through.
  5. While chicken is baking, mix the sauce ingredients in a small bowl.
  6. Remove chicken from oven and let cool slightly before serving with the sauce.
